Clean Recipe: Thai Chicken Rissoles

I started making these rissoles during a 12 week challenge I did back in 2012, if you've been reading my blog for awhile, you might remember them!
I have pretty much made a batch every week since then and never get sick of them! 

They're a perfect Sunday afternoon meal prep recipe, kids and husbands love them and they're also great on the BBQ in summer. 

I have shared the recipe with the most of the Run With Life community and they love them as
much as I do – if you can't be bothered making them, they're even sold in  - The Village Food Store in Heathmont in Victoria, a fabulous cafe owned by one of the Run With Life members.


For my MP friends out there, I team them with salad/vegies and flax oil/omega 3 supplement for a complete meal.



Makes 12 rissoles

Ingredients:
500g lean chicken mince (you can ask your butcher to mince 500g chicken breast)
1 tbsp Thai Green Curry Paste (I look for one without sugar)
Half a bunch of coriander, chopped
1 egg white (you could use the whole egg if you wish)
1 tsp fish sauce
Pinch of stevia (or 1 tsp of palm/brown sugar if you prefer)
Squeeze of lime juice


In a bowl, whisk egg white, curry paste, fish sauce and stevia to combine.
Add chicken mince and coriander and mix well (I use my hands).
Shape into 12 rissoles and cook on a lightly oiled hot pan or BBQ for approx. 3 mins each side or until cooked through.
You can serve rissoles however you like, my favorite is with salad or vegies – and for the MP'ers, I add a high energy carbohydrate also to serve this meal inside the window.
